Processing Methods
Washed Process
Beans are pulped, fermented, and washed to remove all fruit matter before drying.
This method highlights the bean's inherent characteristics, producing clean, bright flavors with pronounced acidity.
Natural Process
Whole cherries are dried in the sun with the fruit intact, creating fruity, wine-like flavors.
The oldest processing method, allowing the bean to absorb sugars from the fruit, resulting in complex, fruity flavors.
Honey Process
A hybrid method where some fruit mucilage is left on the bean during drying.
Combines elements of both washed and natural processing, creating a balanced cup with enhanced sweetness.
